Dr Peter Martin
Theme 2 Lead
Peter is a Senior Lecturer in Chemical Engineering and has 20 years’ experience of researching new ways to measure, control and utilise multiphase properties in products and processes. In the food sector this often means uncovering how microstructure is created in processing through a combination of ingredient formulation and processing, and using this to enable better structure preservation, improve consumer satisfaction or accommodate changes in supply chain.

Professor EN Clare Mills
Theme 3 Lead
Clare has a chair in Molecular Allergology at The University of Manchester and led the EU integrated projects iFAAM and EuroPrevall. Her personal research interests are focused on structure-function relationships in food proteins, particularly with regards to what makes some proteins, and not others, become allergens, including the effects of the food matrix and processing on resistance of food proteins to digestion and the role this plays in determining the allergenicity of foods.
